OVEN FRIED CHICKEN




Heat oven to 375 F.



Melt
1/4 c Shortening and
1/4 c Butter
in a
9"x13" Baking Dish
(in the Heating Oven).



Pour
1/2 c Vegetable Oil
into the Baking Dish.
(Keep Oil Mixture in the Oven
while preparing remaining ingredients)



Beat
1 Egg and
1 tsp Water
in a Shallow Dish.



Combine
10 Crackers (crushed)
1/4 c Cornmeal
1 tsp Dried Sage
Dried Tarragon
and 1/2 tsp Garlic Powder
in a Large reSealable Plastic Bag.
Season with Salt and Black Pepper.
Seal and Shake bag to mix.



Dip
each (of 8)
Chicken Thigh (Skin On)
in Egg mix.
Place 2 Thighs into the Plastic Bag.
Shake to Coat.
Repeat with remaining Chicken.



Arrange Chicken Thighs (Skin Down)
into Heated Baking Dish.
Bake in the Oven for 30 minutes.
Flip Chicken Thighs and
continue Baking until
no longer Pink at the Bone
and the Juices run Clear
