Southern Moon Pies




Heat Oven to 400 F (200 C)
Lightly Grease a Cookie Sheet



COOKIE CRUSTS:
SUGAR MIX:
Cream together:
1/2 c Butter (Softened)
(or Margarine) and
1 c White Sugar
Add:
1 Egg
1 c Evaporated Milk
and
1 TSP Vanilla Extract
Mix Well

In a separate bowl:
FLOUR MIX:
2 c AllPurpose Flour
1/2 TSP Salt
1/2 c unSweetened Cocoa Powder
1 1/2 TSP Baking Soda and
1/2 TSP Baking Powder

Add FLOUR MIX slowly
to SUGAR MIX, Stirring
Mix just until all ingredients are Combined

Drop the Dough
(by rounded tablespoonfuls)
onto Greased Cookie Sheet
Leave at least 3" between Doughs
(Dough will Spread as it Bakes)

Bake in Oven for 7 minutes
(until Firm when Pressed with Finger)
Allow to Cool 1 hour before Filling.



MARSHMALLOW FILLING:
Blend:
1/2 c Butter (softened) or Margarine
1 c Confectioners Sugar
1/2 TSP Vanilla Extract and
1 c Marshmallow Creme
Mix until Smooth.



Assemble Pies by spreading:
2 TBSP of Filling
(on Flat side of a Cookie Crust)
then Covering Filling
with Flat side of
another Cookie Crust.
